A rich and creamy soup featuring smoky bacon, sharp cheddar, and pillowy gnocchi, perfect for cozy evenings or hearty meals.

Ingredients

  • Thick-cut bacon
  • Fresh gnocchi
  • Sharp cheddar cheese, grated
  • Low-sodium chicken broth
  • Heavy cream
  • Fresh minced garlic
  • Finely chopped onion
  • Unsalted butter
  • All-purpose flour
  • Salt
  • Pepper
  • Optional: Chopped spinach or kale
  • Optional: Red pepper flakes

Instructions

  1. Cook the bacon: Heat your pot over medium heat and add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving about 2 tablespoons of bacon fat in the pot.
  2. Sauté the vegetables: Add the chopped onion to the pot and cook until softened, about 3 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Make the roux: Add the butter to the pot and let it melt. Sprinkle in the flour and whisk continuously for 1-2 minutes to create a smooth paste.
  4. Add broth and cream: Gradually pour in the chicken broth, whisking constantly to avoid lumps. Add the heavy cream and bring the mixture to a gentle simmer.
  5. Add gnocchi: Stir in the gnocchi and cook for 4-5 minutes, or until they are tender and start to float.
  6. Add cheese: Lower the heat and stir in the grated cheddar cheese until melted and fully incorporated into the soup.
  7. Season: Add salt and pepper to taste, along with any optional seasonings like red pepper flakes.
  8. Finish: Stir in the crispy bacon, reserving a small amount for garnish.
  9. Serve: Ladle the soup into bowls and garnish with the reserved bacon and additional cheddar cheese if desired.
