Cozy Pasta Fagioli Soup Recipe – Easy & Hearty Meal

  • 2 tablespoons olive oil
  • 1 yellow onion, finely diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped finely
  • 3 cloves garlic, minced
  • 1 pound ground Italian sausage (mild or spicy)
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups chicken broth (or vegetable broth for vegetarian version)
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 cup small pasta (ditalini or elbow pasta, gluten-free if needed)
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. SautΓ© for 5-7 minutes until softened and fragrant.
  2. Add minced garlic and cook for another minute, stirring frequently to prevent burning.
  3. Push the veggies to one side and add the ground Italian sausage. Break it up with a spoon and cook until browned, about 6-8 minutes.
  4. Stir the veggies and sausage together. Add the canned diced tomatoes (with their juices) and stir to combine.
  5. Pour in 6 cups of chicken broth and bring the mixture to a boil. Reduce the heat to a simmer.
  6. Add the cannellini beans (drained and rinsed) and stir. Let the soup simmer for 15 minutes to allow the flavors to meld.
  7. Cook the pasta separately according to package instructions. Drain and set aside.
  8. Stir the cooked pasta into the soup and season with salt and pepper to taste. Simmer for another 5 minutes.
  9. Remove the pot from heat and garnish with chopped fresh parsley. Serve hot, topped with grated Parmesan cheese, if desired.
