A quick and easy breakfast casserole featuring everything bagels, eggs, cheese, and savory bacon, perfect for busy mornings or weekend brunches.

  • 4 large everything bagels, cut into 1-inch cubes (day-old bagels work best)
  • 8 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2%
  • 1 cup (225 g) small-curd cottage cheese, well-drained
  • 2 cups (200 g) shredded sharp cheddar and mozzarella cheese blend
  • 3 stalks green onions, thinly sliced
  • 3 tablespoons everything bagel seasoning (sesame seeds, poppy seeds, dried garlic, onion flakes, sea salt)
  • 6 slices bacon, cooked and crumbled (optional)
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cut everything bagels into 1-inch cubes and toast lightly on a baking sheet for 5 minutes to dry them out.
  2. Cook bacon slices in a skillet over medium heat until crispy, about 6-8 minutes. Drain on paper towels and crumble once cooled.
  3. In a large bowl, whisk together eggs, milk, and cottage cheese. Add salt and pepper to taste and whisk until smooth and slightly frothy.
  4. In a 9×13-inch baking dish, layer toasted bagel cubes evenly. Sprinkle half of the shredded cheese over the bagels, then scatter crumbled bacon and sliced green onions (reserve some for garnish).
  5. Pour the egg mixture evenly over the bagel and cheese layers. Press lightly with a spatula to help bagels absorb the custard.
  6. Generously sprinkle everything bagel seasoning over the top.
  7. Add the remaining shredded cheese on top to create a golden crust.
  8. Bake for 35-40 minutes until the top is golden brown and a knife inserted in the center comes out clean. Edges should be slightly crispy.
  9. Let the casserole rest for 5-10 minutes before slicing. Garnish with fresh chives or parsley and serve warm.

Use day-old bagels or lightly toast fresh bagels to prevent sogginess. Press bagels gently into custard for even soaking. Rest casserole 5-10 minutes before slicing.
