  • ½ cup (120ml) buttermilk
  • 3 medium apples, peeled, cored, and thinly sliced
  • ¼ cup (50g) granulated sugar
  • 1 tsp ground cinnamon

  • 1 tbsp lemon juice
  • ½ cup (65g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ½ tsp ground cinnamon
  • ¼ cup (60g) unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a medium bowl, toss the sliced apples with sugar, cinnamon, nutmeg, and lemon juice. Set aside to let the flavors meld.
  3. In another bowl, combine the flour, brown sugar, and cinnamon for the streusel topping. Add the cold cubed butter and use a pastry cutter or your fingers to mix until crumbly. Place in the fridge while you make the cake batter.
  4. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Using an electric mixer, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined—avoid overmixing.
  7. Pour the batter into the prepared pan, spreading it evenly. Arrange the apple slices on top of the batter in a circular pattern. Then, sprinkle the streusel topping evenly over the apples.
  8. Place the cake in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. The streusel should be golden brown.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
