  • Bone-in chicken thighs or drumsticks
  • 4 cups chicken broth (low-sodium preferred)
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 1 can (14 oz) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Peel and slice the carrots, celery, and onion. Mince the garlic and chop the parsley. Set everything aside.
  2. Heat 2 tablespoons of olive oil in a large soup pot over medium heat. Add the onion, carrots, celery, and garlic. Cook for 5-7 minutes until the veggies are softened and fragrant.
  3. Place the chicken thighs or drumsticks into the pot and cook for 2-3 minutes on each side to lightly brown them.
  4. Pour in the chicken broth and canned tomatoes. Stir in the Italian seasoning, salt, and pepper. Bring to a gentle boil.
  5. Reduce the heat to low and let the soup simmer for 30-40 minutes until the chicken is fully cooked and tender.
  6. Carefully take out the chicken and shred the meat using two forks. Discard the bones and return the shredded chicken to the pot.
  7. Taste and adjust the seasoning as needed. Add a splash of olive oil or a sprinkle of Parmesan for deeper flavor if desired.
  8. Ladle the soup into bowls, sprinkle with fresh parsley and grated Parmesan, and serve hot.
