  • 12 ounces cheese tortellini (fresh or frozen)
  • 3 cups fresh baby spinach leaves, washed and dried
  • 1 tablespoon Italian seasoning

Instructions

  1. Heat the oil and sauté the aromatics: In a large pot over medium heat, add 2 tablespoons of olive oil. Once hot, add the minced garlic and diced onions. Sauté for 2-3 minutes until fragrant and translucent.
  2. Add the carrots and seasonings: Stir in the sliced carrots and 1 tablespoon of Italian seasoning. Cook for another 5 minutes until the carrots soften slightly.
  3. Pour in the broth: Add 5 cups (1.2 liters) of chicken or vegetable broth. Bring to a gentle boil and let simmer for 5 minutes.
  4. Add the tortellini: Stir in 12 ounces (340 grams) of cheese tortellini. Reduce the heat to medium and cook for 5-7 minutes until the tortellini are tender. Check the package instructions for exact cooking time.
  5. Incorporate the cream: Lower the heat and slowly pour in 1 cup (240 ml) of heavy cream while stirring. Let the soup simmer on low for 3-5 minutes to thicken slightly.
  6. Add the spinach: Stir in 3 cups (90 grams) of fresh spinach leaves and cook until wilted, about 2 minutes.
  7. Season and serve: Taste and adjust the seasoning with salt and pepper as needed. Serve hot with a sprinkle of grated Parmesan cheese on top, if desired.
