  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 medium-sized poblano peppers, roasted and peeled
  • 1 can black beans, rinsed and drained
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 medium-sized onion, diced
  • 3 cloves garlic, minced
  • 2 medium-sized carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional garnishes: chopped cilantro, sliced avocado, shredded cheese

Instructions

  1. Roast the poblano peppers over an open flame or under the broiler until the skins are charred. Place them in a bowl, cover with plastic wrap, and let them steam for 10 minutes. Peel off the charred skin, remove the seeds, and dice.
  2. Heat olive oil in a large soup pot over medium heat. Add diced onion, carrots, and celery, and cook for 5-7 minutes until softened. Add minced garlic and cook for another minute, stirring constantly.
  3. Stir in cumin, paprika, salt, and pepper. Add chicken breasts or thighs and cook for 2-3 minutes, just until lightly browned.
  4. Pour in chicken broth and bring to a gentle boil. Reduce heat to low and let it simmer for 20 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it using two forks. Return shredded chicken to the pot.
  6. Stir in heavy cream and black beans, letting it simmer for another 5 minutes.
  7. Use an immersion blender to puree part of the soup directly in the pot, leaving some chunks intact for texture. If using a regular blender, carefully transfer about 2 cups of soup and blend until smooth before returning it to the pot.
  8. Taste and adjust seasoning as needed.
  9. Ladle the soup into bowls and garnish with chopped cilantro, avocado slices, or shredded cheese if desired.
