These chewy Lucky Charms rice crispy treats combine melted marshmallows with colorful Lucky Charms cereal for a nostalgic, sweet, and crunchy snack that’s quick and easy to make.

Ingredients

Scale
  • 3 tablespoons unsalted butter, softened
  • 10 ounces (about 4 cups) mini marshmallows
  • 6 cups Lucky Charms cereal
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Line a 9×13-inch baking pan with parchment paper and lightly grease it with butter or non-stick spray.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter slowly until just melted and shimmering.
  3. Add 10 ounces of mini marshmallows to the melted butter and stir constantly until completely melted and smooth, about 5 minutes.
  4. Remove the saucepan from heat and quickly stir in 1 teaspoon of vanilla extract and a pinch of salt.
  5. Immediately fold in 6 cups of Lucky Charms cereal gently but thoroughly to coat evenly without crushing the cereal.
  6. Pour the mixture into the prepared pan and press down evenly and firmly using a buttered spatula or wax paper-lined hands, aiming for about 1-inch thick treats.
  7. Let the treats cool at room temperature for at least 1 hour to set and become chewy.
  8. Once set, lift the treats out using the parchment paper edges and cut into squares or rectangles. Serve immediately or store for later.

Notes

Use low heat to melt butter and marshmallows slowly to avoid burning. Fold cereal gently to keep crunch and marshmallows intact. Press treats firmly but not too hard to maintain chewiness. Store in an airtight container at room temperature to keep soft; avoid refrigeration. For vegan version, substitute butter with coconut oil and use vegan marshmallows. Gluten-free version possible with gluten-free Lucky Charms and marshmallows.
