  • 1/2 cup creamy peanut butter

  • 1/3 cup old-fashioned rolled oats (toasted, optional)
  • 2 tablespoons chopped roasted peanuts
  • 2 tablespoons mini dark chocolate chips (optional)
  • 2 tablespoons unsweetened coconut flakes (optional)

Instructions

  1. Wash and dry apples. Slice into 1/4-inch rounds using a sharp paring knife or mandoline. Remove seeds and toss slices in lemon juice.
  2. Optional: Toast rolled oats and coconut flakes in a dry skillet over medium heat for 2-3 minutes until golden and fragrant. Let cool.
  3. In a small bowl, mix peanut butter, honey or maple syrup, cinnamon, and a pinch of salt until smooth. Microwave peanut butter for 10 seconds if needed to soften.
  4. Lay apple slices flat on a baking sheet or large plate. Spread about 2 teaspoons of peanut butter mixture on each slice.
  5. Sprinkle each slice with toasted oats, roasted peanuts, coconut flakes, and mini chocolate chips. Press gently so toppings stick.
  6. Serve immediately for maximum crunch, or refrigerate for 10 minutes for a chilled treat. Best enjoyed fresh; leftovers keep for up to 1 day in the fridge.
